My Easy Spinach Pie

I like to cook vegan. This is a super easy recipe, tasty and quick, which can be eaten cold or warm. The tip is to cook the pie on a baking parchment, placed directly on the oven rack.

Ingredients, for 6 people:

Oven @ 180°C / 425°F with fan

  • 2 vegan pastry sheets of about 300g / 10oz each

  • 3 large onions

  • 750g / 26 oz of washed and dried spinach

  • 2 Tbsp olive oil, twice

Method:

Preheat the oven @ 180°C / 425°F with fan

  1. Coarsely chop the peeled onions.

  2. In a very large skillet, heat 2 table spoons of olive oil and add the chopped onions. Stir regularly until golden brown. Set aside in a bowl.

  3. In the same skillet, heat 2 table spoons of olive oil again and add the cleaned and dried spinach leaves. Constantly stir, and cook for about 10 minutes, until wilted.

  4. Season with salt and pepper.

  5. Combine the onions and the melted spinach.

Assemble the pie:

  1. Place one pastry sheet on the baking parchment. I like to stretch it and to smooth it out a little.

  2. Place the spinach in the middle of the pastry, and the spinach filling on top.

  3. Wrap using the other puff pastry sheet and seal them well. You can use water to help seal, but I don’t find it necessary.

  4. It is really important to score lines, not just to decorate, but to allow the steam to escape.

Place the baking paper on an oven rack, and put the rack at the second level from the bottom. This way, it will cook evenly.

Cook for 35 minutes until golden.
